“Skolavslutning” cake popsicles & cupcakes

It was the last day of school before the summer for many Swedish kids today, including mine. We had a beautiful end-of-school ceremony with all classes performing, audience singing and a moving speech by our principal. To thank our wonderful teachers for their hard work throughout the year, I made six mini cakes to complement the parents’ gifts as well as 50 cake popsicles and cupcakes for a bunch of hungry kids. It was all gone within the blink of an eye!
